I can’t take any credit for these! Last week I had a lot of olive oil and dwindling butter supplies, so I googled olive oil cookies. This recipe came up, courtesy of California Olive Ranch.

They are very crunchy and taste quite a lot like biscotti. For the total biscotti effect I would suggest slicing them once cool and baking the slices for another few minutes.
I used a bit less sugar and added a handful of sultanas. Would have used nuts but I have eaten them all. The recipe calls for vanilla but English chocolate has vanilla in it so no need unless you want to.
