Porridge with blueberries

No, it isn’t a pun, although sometimes I feel as if I have been doing time these past months. At least I have been allowed out to work in the garden.

Ingredients: One cup of oats, I have used jumbo oats but any oats are good. water, a pinch of salt, single cream, blueberries

Method: Soak the oats in 2 cups of water while you make yourself a cup of tea. Then, add a pinch of sea salt and set to cook on a very low heat, stirring frequently with a wooden spoon. Try to avoid the oats catching on the bottom of the pan: no-one likes burnt porridge. Keep an eye on the water, adding more as needed. The idea is to reach the end point with cooked oats and sufficient liquid, like a risotto. Again, a personal decision. It doesn’t take long.

Once made, dress with a spoonful of single cream and some delicious blueberries. Eat slowly, savouring every mouthful.
